100 weeks ago, I felt like was fucked. I had no money, I felt completely alone. Out of necessity, I created a 7 plates discovery menu to make a bit of money. I thought this temporary manual job would at least get me enough money to eat while figuring out a permanent solution. Little did I know what would happen next!
This off the cuffs temporary solution has grown far beyond my wildest dreams. Not only I was profitable within the first month, but within 6 months one of my plates was featured next to culinary legend Heston Blumenthal as "25 dishes to travel around the world for". I got selected out of 40,000 restaurants all over the world, and I had never even worked as a waiter before.

HiR Fine Dining - Jungle Culinary Adventure is now an institution in Costa Rica and last month we did our first pop up fine dining events in Los Angeles and New York.
